Plants often have an affinity for certain organs and body systems. For Chamomile, it's the digestive and nervous systems.
Chamomile assists in all manner of digestive disorders from IBS to Chron's, plus conditions such diarrhea and constipation. It's bitter flavor stimulates digestion and increases appetite before a meal and helps with bloating, gas and spasms after a meal. Overall it's an ally for sluggish digestion. Chamomile aids in a range of nervous system ailments such as insomnia, nervousness, stress and muscle tension. It's a mild sedative with antispasmodic properties that help quiet the nervous system and relax the body and mind. Put all of this together and it's a wonderful tool when there is nervous tension that manifests in the belly and disrupts digestion. Hence Chamomile Bitters. For those not familiar with Bitters, it is a tincture like concoction that gets the digestive process flowing. The bitter taste signals the stomach to secrete digestive juices which support better breakdown and absorption of what you eat.

1 tbsp dandelion root
1/2 tsp ginger
1/2 tsp catnip
1/2 orange peel
1/4 tsp fennel seeds
4oz high proof alcohol such as vodka
Steep all herbs in alcohol for 4-6 weeks.
Strain and bottle.
